My son recently completed a project for his Social Studies class.  Each student was assigned a country…and they had to come up with a traditional recipe from that country.  Since my wife’s side of the family (maternal) is from Norway, my son chose to make Norwegian Christmas cookies.

Here’s the recipe:

Preheat oven to 350F.  In the bowl of your mixer, cream the butter and sugar.  Add the egg.  Add the almond extract and vanilla.  Beat until light and fluffy.

Add the flour and chopped walnuts until just moistened.  Remove from mixing bowl.  Cover and chill until the dough is firm enough to handle  Shape into 1 inch balls; place 2 inches apart on greased (on non-stick) baking sheet.  Flatten with the bottom of  a glass dipped in colored sugar.  Bake until cookies are set.

Makes about 30 cookies.
